Not really a documentary but there’s a movie about the making and the background of the movie ‘The Room’. It’s good (the former, not the latter).
Take an example where the health risks are uncontroversial, such as smoking. It’s unhealthy, no doubt. But would it be okay for the government to ban cigarettes?
Nice thread but I think you’re missing the larger issue. Take it as a given that gas stoves are unhealthy. Does that mean the government should have the authority to ban them? No, because paternalism is wrong. There are moral considerations to be made, not just scientific ones.
Don’t give them any ideas or they’ll try to ban olive oil, too.

Note for the gym: when I use my maximum weight for an exercise and notice questionable form, I reduce the weight by ~1/3 and focus on proper form at the same number of reps.
As my old trainer says: don’t make a heavy weight look easy. Make a light weight look hard.
Perhaps it’s the neo-Darwinian framework in particular, with replicators at its core, that is needed? Maybe ideas replicate within a mind.
